Black Walnut Maple Pumpkin Streusel Muffins

INGREDIENTS:

Muffins:

  • 1 cup pumpkin puree
  • 1/3 cup butter, melted
  • ¾ cup maple syrup
  • 2 eggs, well beaten
  • ¼ cup Milk
  • 1 Tbsp vanilla
  • 1 Tbsp Maple flavoring
  • 1 ¾ cups pastry flour (all-purpose flour may be substituted).
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2-3 tsp pumpkin pie spice
  • ½ cup Hammons black walnuts

Streusel Topping:

  • ¾ cup all purpose flour
  • ¼ cup sugar
  • ¼ cup brown sugar, packed
  • 1 tsp Pumpkin Pie spice
  • 6 Tbsp Butter, melted

Maple Icing:

  • 1 cup powdered sugar
  • 2 Tbsp Maple syrup
  • 2 Tbsp Milk
  • ¼ tsp Maple flavoring

Directions

For the Muffins:

Preheat the oven to 350℉. Line muffin pan with
paper liners. In a large bowl, mix pumpkin, butter, maple syrup, eggs, milk,
vanilla and maple flavoring. In a separate bowl, sift flour, baking powder,
baking soda, salt and pumpkin pie spice and then blend into wet ingredients.
Fold in black walnuts. Scoop into lined muffin pan. Top each muffin with
streusel mixture. Bake for 19-20 minutes. Remove muffins from the pan and cool.

For the Streusel Topping:
Combine flour, sugar, brown sugar, pumpkin pie spice, and butter. Blend all together
with a fork until butter is fully incorporated and in pea size pieces. Allow to
cool and set aside.

For the Maple Icing:
Mix all the ingredients until a smooth
consistency. Drizzle over cooled muffins.
