Black Walnut Maple Pumpkin Streusel Muffins

INGREDIENTS:
Muffins:
- 1 cup pumpkin puree
- 1/3 cup butter, melted
- ¾ cup maple syrup
- 2 eggs, well beaten
- ¼ cup Milk
- 1 Tbsp vanilla
- 1 Tbsp Maple flavoring
- 1 ¾ cups pastry flour (all-purpose flour may be substituted).
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2-3 tsp pumpkin pie spice
- ½ cup Hammons black walnuts
Streusel Topping:
- ¾ cup all purpose flour
- ¼ cup sugar
- ¼ cup brown sugar, packed
- 1 tsp Pumpkin Pie spice
- 6 Tbsp Butter, melted
Maple Icing:
- 1 cup powdered sugar
- 2 Tbsp Maple syrup
- 2 Tbsp Milk
- ¼ tsp Maple flavoring
